Growing Pains, From a one man crew to a full restoration company

I started my business about 2 years ago and at first it was all great and easy. Customers were kept track of by notebook and things were very simple. Very quickly we started growing to the point where just a notebook with a calendar was not keeping up with the work load. I bought an IPad and got some invoicing software and that solved the problem for a bit.

Now we have two big box trucks with 5 employees and do about 20-30 jobs a week. That is not to mention the restoration and dry ice projects that come up way more often then before. Basically, now we are at the level of a mid sized company but do not have the back bone and the structure to support it. We are looking at a large shop and getting an office assistant but I am afraid about what would happen if the calls stopped coming in and our overhead got too big with the extra staff and the increased rent.

Any suggestions would be appreciated in terms of what is most important for growth, what steps you would take first in an expansion and just any other advice would be great.
